In its most grueling chapter yet, Season 3 takes viewers deep into the unforgiving Victorian High Country. This season is a tribute to the "Ghost of the Bush"—the Sambar deer—and the dedicated hunters who chase them on public land. Facing sub-zero temperatures, dense scrub, and vertical terrain, Chris Waters and his team test their grit against Australia’s toughest hunting challenges. Beyond the hunt, Season 3 captures the soul of the high country: the campfire conversations, the camaraderie of shared hardship, and the profound respect for the animals that provide. It’s a season defined by persistence, where the mountain doesn't give up its secrets easily, and every success is hard-earned.

Season 3 Episodes
1. I smell stag!
Chris kicks off Season 3 in the Victorian High Country with Brad and Linda. They find fresh stag sign in a new corner of the bush, but local hounds complicate the hunt before a campfire feast.
2. Chasing Ghosts in the Wet
Chris and Luke Dobson hunt the wet High Country with pointers Ryder and Remi. Despite tough conditions after heavy rain, the team pushes deep into the bush for Sambar and venison curry.
3. Breaking the curse
Chris joins Scott and Jody Johnson in the misty High Country to break a dry spell. After enduring freezing gullies and a cold creek bath, the team secures a big moment that ends with a bang.
4. -6°C Frozen Sambar Hunt
Chris and Jordi brave -6°C temps in the High Country, using tree stands to hunt public land Sambar. The team tests their grit before Jordi prepares fresh venison tartare in the field.
5. Blood on the trees
The team pushes deeper into the Victorian High Country for better grounds. With local deer on edge, they relocate camp further into the bush to continue their rugged public land adventure.
6. Tumbling bullets
Chris pushes into the thickest bush he has ever hunted. In cold, steep, and rugged country, the pair is stalked by wild dogs and faces a close encounter with a wary Sambar stag.
7. Sambar Deer Got the Drop on Us
The Victorian High Country adventure continues in new territory. Chris is joined by Cass Fleming for their first hunt; she takes the shot while Chris provides backup from the binoculars.
8. The High Country Doesn’t Forgive
After a month of grinding in the High Country, it comes down to this: one final day, one solo mission, and one last chance for Chris to fill the freezer for himself.
9. The Mountain Gave Up a Sambar
Persistence pays off in this grueling episode where the vertical terrain and thick scrub finally yield to Chris's tracking skills, resulting in a successful Sambar harvest.
